Waffles. Skinny Waffles? Yes... these homemade skinny waffles were the best thing I had for breakfast this morning! They truly made my mouth water. I loved the taste, texture, and how fluffy they were!
I love trying new recipes and this was one definitely a winner. I usually make my waffles from Bisquick® but this homemade skinny version with applesauce was unique. I really liked it.
Here is my recipe:

*Adapted from Betty Crocker
2 egg whites
2 cups all-purpose or whole wheat flour
1 3/4 cups milk
1/4 cup unsweetened applesauce
1 Tbsp. sugar
4 tsp. baking powder
1/4 tsp. salt
Heat waffle iron. Beat eggs in large bowl with beaters until smooth. Beat in remaining ingredients.
Pour about a 2/3 cup of batter onto waffle iron. Close lid of waffle iron. Bake for about 5 minutes or until the green light says it is done. Carefully remove waffle. Serve immediately. Repeat with remaining batter.
My kids reactions to these "skinny" waffles:
They taste like normal.
You added applesauce, really?
They are good.
When I first tasted these waffles, my thought was... these are not skinny. They are actually a very fluffy waffle. They were somewhat hard to cut into, but they were delicious! I served mine with blackberries, maple syrup, and dollop of whipping cream. They are a very good waffle. This lighter or "skinny" version with applesauce was very scrumptious!
