How to Doctor Up a Boxed Cake Mix


My daughter celebrated a birthday this past week. I wanted to bake a cake for her. I usually buy cakes, because to be honest I am not that good at decorating cakes. I can't get the frosting just right. I make the frosting and it doesn't turn out to the right consistency.
But... I was determined to bake a cake. I was also determined for it to taste good.

I love store bought cakes. They are rich with taste, flavor, and frosting!

Some people don't like the frosting, but I have always loved it.
I decided to go a different route and try to doctor up my cake. I think it was very delicious. I also think it was very comparable to the store bought cakes... probably just not frosted as pretty.

Here is what I did:

How to Doctor Up a Boxed Cake Mix

1 white boxed cake mix
These are the ingredients on the back of the boxed cake mix that you will need to add.
3 eggs
⅓ cup vegetable oil
1 cup water

These are the 3 extra ingredients that you can add to doctor up your cake mix.
1 extra egg
¾ cup sour cream
1 small box of instant pudding mix (dry powder)

I added a white chocolate pudding to the cake mix. It was really delicious!

Directions:
Preheat oven to 350 degrees.

  1. Dump dry cake mix into a large mixing bowl. Set aside.
  2. Take the 4 eggs and beat them in a separate bowl. 
  3. Then add them to the dry cake mix. Add oil, and water. Then beat for two minutes. 
  4. After the two minutes is up, add the sour cream and instant pudding mix. Beat for another two minutes. 

Pour cake mix into a baking dish of your choice... sprayed with cooking spray.  Bake at 350 degrees according to the directions on the back of the cake mix box. 

I baked my cake in a 9x13 glass pan, therefore it baked for 34-38 minutes. I kept checking on it to make sure it was done and wasn't overcooked.

I let it sit out for about 5 minutes after it was baked to let it cool.
Once cooled... I transferred it to a board and frosted it with Cool Whip Frosting. This Frosting is one of our favorites. It is light, creamy, and easy to use. The flavor is amazing!!


It is a lot creamy than your typical frosting. In fact, it made it kind of hard to frost the cake, but it worked.


So that my friends that is How you Doctor Up a Boxed Cake Mix.
You add 3 easy extra ingredients and it makes it taste like it came right from the bakery on the corner!!

Now... to work on my frosting skills!
