I am very excited to share with you one my favorite pumpkin recipes of all time!!
Flap Jack-0-Lanterns... { aka Pumpkin Pancakes}
I absolutely love this recipe! I am not kidding... this is a really really good recipe!
I got it from a friend a long time ago... and don't know the original source... but it has become a family favorite ever since.
Every year when pumpkin season hits... I cannot wait to make these. I make them so many times... by the time Thanksgiving rolls around my family is sick of it.
But me... nope... never!
Here is the amazing recipe:
Pumpkin Pancakes

2 cups all purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
2 Tbsp. sugar
1 tsp. pumpkin pie spice
2 eggs
1 3/4 cups milk
3 Tbsp. melted butter plus 1 Tbsp. for frying
1/ 2 cup canned pumpkin
Sift together the flour, baking powder, salt, sugar, and pumpkin pie spice in a large bowl. In a different bowl whisk eggs and milk. Add 3 Tbsp. melted butter and the pumpkin into the wet ingredients and beat together until combined.
Pour the wet ingredients into the dry ingredients and beat just until blended. Heat the remaining butter on a griddle over medium high heat. Then pour 1/4 cup of each batter for each pancake. Brown on both sides.
Makes 20 pancakes.
Dish them up to your family and watch them eat them up! Here is how my 4 little girls ate them!
These pancakes are delicious with syrup, peanut butter, and or whip cream.
They are a hearty pancake... but oh so moist and delicious!
Don' they just look gorgeous!

I cook all of the time and love pancakes, but I've never made pancakes before! Can you believe it?! These look amazing, so maybe my first pancakes should be pumpkin pancakes!
