Muffin Monday... Pumpkin Gingerbread Muffins.

The Gingerbread Man meets The Muffin Man.
Run... you can't catch me I am the {pumpkin gingerbread} muffin man.
This is a muffin that combines pumpkin puree, pumpkin pie spice, and ginger.
It is a very good muffin! Believe me when I say...You would want this Pumpkin Gingerbread Muffin delivered to your door!
Oh the muffin man... the muffin man... the muffin man.... if he had this muffin in his tray he would be so delighted. You will be too.
So... why not add it to your tray??
Here is the recipe:
Pumpkin Gingerbread Muffins

3/4 cup packed brown sugar
1/2 cup butter, softened
1/4 cup molasses
1 large egg
1 cup pumpkin puree
1 3/4 cups all purpose flour
1 tsp. baking soda
1/4 tsp. salt
1/2 tsp. pumpkin pie spice
1/2 tsp. ginger
1/2 tsp. nutmeg
Preheat oven to 350 degrees.
- In a large bowl combine brown sugar, butter, and molasses. Beat with an electric beater. Add in egg, and pumpkin puree.
- Add flour, baking soda, salt, pumpkin pie spice, ginger, and nutmeg. Mix with a spoon until moistened. Do not overmix.
Bake at 350 for 20 minutes.
Remove to wire rack and let cool.
In the end of The Gingerbread Man story he eventually gets deceived and is eaten by the fox.
In the end these Pumpkin Gingerbread Muffins will get eaten... by all those peeps in your house.
