Rainbow Cake


St. Patrick's Day is only a few days away. I was wanting to make something in the kitchen. I came across this recipe and thought... wow this will be perfect for the holiday.

I got out my Bundt pan and made this lovely cake.


Once it was cooled... my daughter Bo and I decorated it with cool whip cream cheese frosting and skittles.  My daughter Bo is an amazing little girl. She brings me so much joy and laughter. She was named after the little girl in the movie Signs with Mel Gibson. However, I have always wanted a little girl named Rain.
Anybody with the name Rain??

Anyways.. I got a Bo and she truly is a pot of gold at the end of the rainbow.


What are the brown specks... my husband actually asked?? They are actually gold sprinkles.
I was so excited when I found them at the store!
I decided not to decorate the whole cake with skittles just in case someone didn't want them.
You could decorate it however you want! You could even add marshmallows for the clouds.
The sky is the limit here!!


It was such a fun mother daughter bonding activity.





Here is the recipe:

Rainbow Cake

*adapted from The Cake Mix Bible

1 package white cake mix
1 package instant white chocolate pudding and pie filling mix
1 cup vegetable oil
4 egg whites
1/2 cup milk

frosting
skittles
gold sprinkles
rolos

Directions:
1. Preheat oven to 350 degrees. 
2. Lightly grease a bundt pan. 
3. Combine cake mix, oil, egg whites, and milk in large bowl. Beat with electric mixer at medium speed for 2 minutes. Pour into bundt pan. 
4. Bake for 35-45 minutes, checking on it the last 10 minutes to make sure it is not overcooked. 
5. Remove from oven and let cool for 1 hour on wire rack. Invert cake onto serving plate. 
6. Frost with frosting. 
7. Decorate with colorful skittles. 
8. Fill hole of bundt cake with rolos.


This Rainbow Cake... is a creamy white chocolate cake decorated with a color of rainbow!


I love how it turned out!
I love the time spent with my daughter Bo.
