Freezer March Meal: Teriyaki Chicken



About a year ago a group of women got to together to make some freezer meals for a very good friend of mine who is struggling with Breast Cancer. You can find her fight with cancer here!! She is one of the most astounding woman I know!!  Right as we speak (type) she is undergoing radiation. Prayers go out to her and her sweet family! I decided we needed to make this meal again. I got some friends/sistas together to make it funner! 
 I have come to love this simple recipe. 
  





Yes, someday my kitchen will not be YELLOW! It was this way when we moved in 3 years ago!
We all had fun visiting, and preparing our meal and funny truth some sistas had not planned dinner for tonight, so they are not freezing theirs but eating theirs.  Ha Ha.

Teriyaki Chicken
From 30 meals in one day

2 lbs boneless skinless chicken breast
3/4 c. soy sauce
1 c. sugar
3 T. red wine vinegar
2 tsp. sesame oil
2 tsp. minced garlic
1 1/2 tsp. minced ginger
1/4 c. cornstarch
Cut chicken into bite-sized pieces. Arrange in a greased baking dish. Bake for 15 min. at 350 degrees. Pour off liquid. In a saucepan combine soy sauce, sugar, vinegar, oil, garlic, ginger, and cornstarch. Cook and stir until thick and glossy. Pour over chicken in baking dish. Bake uncovered for 20 minutes at 350 degrees. Remove from oven and allow to cool. Place in freezer bag. Label and freeze. 6 servings
To serve: Thaw. Heat until hot and bubbly. Serve with rice and egg rolls.
This recipe may be frozen prior to baking. Bake chicken 15 minutes and pour off liquid. Place chicken and sauce in freezer bag. Label and freeze.
To serve: Thaw. Bake uncovered at 350 degrees for 30 minutes.
