I remember the first time I tried an Artichoke. We were out to dinner at a pizza joint. My husband ordered this pizza with Artichokes. I had never had tasted an Artichoke before and was hesitant to try them but they were very delicious. To be honest we have a jar of Artichokes in our fridge and have only used them on pizzas and salads.
This recipe was given to me from a friend and knew I wanted to try it. I wanted to try Artichokes in something other than pizza. This recipe was simple, cheesy, and I loved the Artichokes and Fried Onions mixture. This Cheesy Artichoke Goodness was really really good!! I had most of the ingredients on hand, but didn't have the French Fried Onions. At the grocery store I walked up and down the aisles trying to find the can of French Fried Onions. I finally asked someone and then he walked up and down the aisles looking for them too. I finally found them down the aisle with canned vegetables. So if you have to go to the store to find them you will know right where to go!!

Gather your ingredients.
Cook noodles according to package directions. Drain and rinse.
Combine cream cheese, sour cream, and Ranch dressing mix.
Stir cream cheese mixture into noodles.
The mixture was thick so I just tried to coat the noodles.
Cut artichokes into bite-size pieces. Heat olive oil in frying pan. Saute artichokes, garlic, and red pepper flakes, if desired.
***I just cut my in half Artichokes, but they ended up still being too big. I would chop them smaller.
Place half of your noodles in 9x13 pan.
Next, layer half of your Artichoke mixture.
Then layer half of your cheese and half of your French Fried Onions.
Repeat layers.
Bake for 20 minutes or until hot and bubbly.

Cheesy Artichoke Goodness
1 bag egg noodles
8 oz cream cheese, softened
1 cup low fat sour cream
1 packet dry Ranch dressing mix
1-2 tsp minced garlic
1 cup artichoke hearts
1 can French fried onions
2-3 cups cheddar cheese, grated
2 Tbsp olive oil
about 1/2 tsp red pepper flakes, optional
Preheat oven to 350 degrees.
Cook noodles according to package directions. Combine cream cheese, sour cream, and Ranch mix. When noodles are done, drain and stir in cream cheese mixture. Cut artichokes into bite-size pieces. Heat olive oil in frying pan. Saute artichokes, garlic, and red pepper flakes, if desired. Place half noodles in a 9x13 pan, then half artichoke mixture, then half cheese, and then half fried onions. Repeat layers. Sprinkle top with more cheese on top, if desired. Bake for 20 minutes, or until bubbly and hot.
