Cool Whip Ice Cream Cupcakes



My daughter Bree is having a birthday this month and is turning 8. My daughter Bree is the only one in our family that does not like cupcakes. Let me be more specific she doesn't like the frosting.
Isn't that crazy?? What kid doesn't like cupcake frosting!?? Usually, kids only eat the frosting and leave the cupcake. My daughter Bree is a different story.

In planning for her birthday I wanted to make her some cupcakes, but wasn't sure what to do about the frosting situation. My brain went to work and you will love the outcome!!!

I  happen to come across this cool little tool at Wal-Mart called a cupcake corer. 


I bought it, not knowing what I was going to do with it. It just seemed fun! Then my friend from Texas posted about Blue Bell's new Ice Cream Mint Cookies-n-Cream. We love Blue Bell Ice Cream! The best Ice Cream in the world!













Then this thought popped into my head Ice Cream filled Cupcakes!! Yes, I could use the corer and put ice cream in the middle.
Soooo where did I go to find the recipe, pinterest of course! These recipes that I found were similar to the ones that I wanted to create, but again not exactly what I had in mind.
I found this recipe for Ice Cream Cupcakes  at A Pumpkin and a Princess and they looked so delicious!
I found this Cake Batter Ice Cream Cupcakes at BubblyNatureCreations and these cupcakes looked good as well!
I kept fooling around with my idea and I remembered that I had some of this new Cool Whip Frosting in my freezer.
I had bought it one day and stored it away. Do you see where all my inspiration is coming from.....??
A thought here, a thought there. This recipe turned out better than I could possibly imagine, because  my daughter Bree actually liked the frosting. She said, "Mom, this is so good!!" I couldn't agree more!! The Cool Whip Frosting is amazing, added in with the ice cream and cupcakes. The Cool Whip Frosting comes in three different flavors. Vanilla, Cream Cheese, and Chocolate.




















What is great about this frosting is this:
Thaw: place it unopened in the refrigerator for 4 hours or on the counter top for 1 hour. That is it! I had this in my freezer and when I started these cupcakes by they time they were done they were ready to frost. This frosting is a thick frosting.
Storage: Keeps in refrigerator for up to 2 weeks. It can frost 13x9 cake, 8 or 9 inch 2 layer cake, or 24 cupcakes. To maintain the whipped texture, do not heat or microwave.

Cool Whip Ice Cream Cupcakes

Preparation:
1. The very first step is to make room in your freezer. No Joke!  I did not do this and it made it very difficult. These cupcakes have to be frozen during the process and then later for storage.
2. Get a pan that will fit in your freezer, like a 9x13 cake pan to put the cupcakes in.
Directions:
3. Bake cupcakes according to directions on package. I had used milk chocolate cupcakes, but you could really use any kind that you would prefer. Cool completely.
4. Core cupcakes with little tool.
5. Fill cored cupcakes with Ice Cream.
6. Once filled with Ice Cream, Freeze in Freezer for about 2 hours or until hardened.
7. Right before serving Frost with the amazing Cool Whip Frosting of your choice.
8.  Decorate with sprinkles!



Here is my little sweet Bree helping me. She loves to be with me in the kitchen and I love it too!





Filling the Cupcakes: This was an interesting step for me. I started out with an Ice Cream scoop and it had way too much Ice Cream. Then I went to a spoon and still couldn't get in them the hole just right. I think a little melon baller would work perfectly. I didn't have one on hand, and maybe you will,  but I think that would be just the right size. We made them work with the spoon. 
*You could frost the cupcakes and store in freezer until time to serve or you could wait until it is time to serve and then frost. Either way works!!!

To Frost I used a Wilton 12 inch Disposable Decorating Bag with a #10 tip. I am sure you could use any type of tip to decorate, but that is what I had. I just put the frosting in the bag, tied it off, and frosted. I am no cake decorator and someday would love to learn, but this did the job for me!!
This is what the inside looks like, such a beauty!! Tastes better than it looks I promise!!

  



Add my favorite thing in the whole wide world-Sprinkles!! I love Sprinkles! I really do. I even add them to other items because I love them so much. My husband does not like them, he says they taste like dirt. The kids ask every time now when I make cupcakes if they are going to taste like dirt. No they will not!


The best part about this cupcake is First the frosting, and Second you don't have to serve cake and ice cream now, it is all inclusive!
