Ok... Who is going to be making you and or your mother a special meal on Mother's Day?? Are you going over to your mother's for dinner, or are you having her over to your place?? Is your husband and or children going to spoil you by making you brunch or dinner?? Either way you will want to make this Mother's Day Banana Bundt Cake. I won't be spending Mother's Day with my mother, however I got lucky and my mom was in town and got to taste test it for me and she loved it!
I also got to serve this to my girls and their cousins. I got many compliments from my girls and they loved it too, they kept coming back for seconds.
Banana Bundt Cake

*Adapted from 101 Things to Do with a Cake Mix
2 bananas, mashed
1 white cake mix
1 small box vanilla instant pudding
3 eggs
1 cup sour cream
2 Tbsp. oil
1/3 cup water
1/4 tsp. baking powder
Frosting of your choice.
Preheat oven to 350 degrees.
Combine all ingredients into a mixing bowl. Mix just until moistened. Pour batter into greased and floured bundt pan.
Bake for 45-50 minutes. Invert cake onto a platter, plate, or whatever you plan on serving it on, and let cool.
Frost.
Serve.
Here are my tips on making this lovely cake:
You really must flour and grease the bundt pan. If you just spray it with Pam®, it doesn't come out of the pan, it sticks to it.
Just don't flour it too much like I did... He He
After it has completely cooled, frost it. Now... I have never really frosted a bundt cake before. So... this looks a little messy, however I used my new favorite frosting from Cool Whip Ice Cream Cupcakes and froze it for 2 hours and it came out perfect! After I frosted it, I googled it and you can drizzle it as well. It may look better.
Slice and serve with fresh, cut up, bananas!!
