Whole Wheat Blender Pancakes




The other night I was talking to my husband and told him I was on the hunt for the perfect pancake recipe. Ugh- he said.  According to my husband it is not possible. You see he grew up in a big family where his mom made wheat pancakes a lot and to be honest he didn't enjoy them. He said to me I only like those Whole Wheat Blender Pancakes you make. Yea! I like this recipe too because to be honest wheat scares me. I really don't use wheat that often. I know it is super healthy for you, but it does take time to grind it. I don't have a grinder and what is so awesome about this recipe, it goes straight into your blender. No soaking overnight etc. The other neat thing is that I pour the batter right from the blender. Once it is mixed you don't have to do anything else. Yea! 



Whole Wheat Blender Pancakes

1 cup uncooked whole wheat kernels
1 cup milk
2 eggs
1/3 cup oil
1 tsp. salt
2 Tbsp. sugar
2 tsp. baking powder

Preheat griddle to 350F. 
Put wheat and milk in blender and blend on high speed until fine, about 3-5 minutes. Add remaining ingredients and blend until mixed together. Pour out on pre-heated griddle. Cook pancakes 2 minutes per side or until golden brown. 
Makes about 9 pancakes. 





 This is what it looks like when you have blended it for three minutes.


 Add other ingredients and mix. Then just pour right from blender onto griddle. Love this part!!

They make look a little runny but they will be okay once flipped. See mine even ran off the griddle a bit. They turn out great and fluffy.
