Raspberry Spinach Salad


Summer Spinach Salad


This Raspberry Spinach Salad is the perfect addition to your summer menu. Here in Arizona... we try not to use the oven in the summer. It gets too hot. I try not to cook but on some days you just have too. Other days, it is nice to have a light simple salad for dinner. I like this salad. It is light, fresh, and sweet. 
I like the spinach and raspberry combo. I love the raspberry vinaigrette dressing. It is delicious!
I am always looking for ways to eat my greens and this is one really good salad. 


Raspberry Spinach Salad

5 oz spinach and green leaf lettuce, combined
1/2 medium red onion, sliced
1 1/2 cup raspberries, clean fresh raspberries frozen, then half-thawed for salad
1/2 cup Gorgonzola or blue cheese, crumbled
1 cup pecans
3 Tbsp. raspberry vinaigrette dressing 
Salt & pepper to taste
Combine spinach, onion, raspberries, cheese, and nuts in a salad bowl. Add the vinaigrette to salad and toss well. Serve immediately.









Here is another similar salad-Baby Spinach, Raspberry, and Toasted Walnut Salad in Raspberry Vinaigrette from Karista's Kitchen. She uses Raspberry Vinegar. I think I might want to try that someday. I just bought my salad dressing.
