Apple Cranberry Oat Muffins


Muffin Monday... today I am sharing a magical muffin with you. Why is magical you ask? Because they will disappear before you know it. Yes... the recipe only makes 12 Apple Cranberry Oat Muffins, but before your very eyes they will be gone!

This muffin is stuffed full of goodness. They are healthy, delicious, and a very good muffin.

Here is the Recipe... you will want to make these for breakfast or mid morning snack very soon!! Your loved ones will devour them and say, Where did they go?? So maybe... double the batch if at all possible.

Apple Cranberry Oat Muffins
*adapted from Balanced Belly

1 cup flour
1 cup quick oats
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/2 tsp. nutmeg
1/8 tsp. ground cloves
1/4 cup melted butter
1/2 cup maple syrup
1/2 cup applesauce
1 egg
1 tsp. vanilla
1 cup diced apple-peeled and cored
1 cup craisins
1/2 cup chopped pecans

Preheat oven to 350 degrees. Line muffin pan with paper cups.  In a large bowl mix dry ingredients. In a small bowl mix wet ingredients. Add wet to dry ingredients and mix just to combine. Stir in apple, craisins, and pecans. Divide batter among paper muffin cups. Bake at 350 degrees for 25 minutes.
Cool and transfer to wire rack to cool completely. Now... devour these babies. They are that good!

These muffins did make my senses grow sharper... especially after I baked them... oh the smell of the house... after I ate them oh the taste of them on my tongue, I am not exaggerating these are magical muffins.
