Blueberry-Almond Streusel Muffins


Monday's are Muffin days. I am trying to build up my muffin repertoire. Today.. here in Arizona it was raining. We don't get rain that often... and so it added a nice fall feel to my baking in the kitchen.

I love a good muffin. Blueberry is one of my all time favorite!

So... when I came across this recipe for Blueberry-Almond Streusel Muffins I knew I had to give it a try. I tried it and loved it!  The streusel topping added so much deliciousness to it!

I loved breaking open the muffin and seeing the color of blueberries. It truly makes me happy!

Here is the Recipe:

Blueberry-Almond Streusel Muffins

*adapted from Cooking Light

2 1/2 cups all purpose flour
1 cup granulated sugar
1 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 cup 2% low-fat milk
1/2 cup buttermilk
1/3 cup ricotta cheese
2 Tbsp. vegetable oil
1 Tbsp. vanilla extract
1/2 tsp. almond extract
3 large egg whites

1 1/3 cups blueberries

Streusel Topping
1/4 cup all purpose flour
1/2 cup finely chopped almonds
1 Tbsp. brown sugar
1 Tbsp. margarine, melted

Directions:
Preheat oven to 400 degrees. Line muffin tin with cupcake liners.  Combine first 5 dry ingredients in a large bowl. Combine milk and next 6 ingredients in a medium bowl, and beat with beaters for 1 minute. Add to flour mixture, stirring just until moist. Gently stir in blueberries.
Divide evenly among cupcake liners.

Make Streusel Topping. Sprinkle evenly over batter. Bake at 400 for 18 minutes, or until done.
Remove from pans immediately.
Makes 18-24 large muffins.




* I found that you need to double the streusel topping to cover all of the muffins.
* I substituted almond milk for the buttermilk because I didn't have any on hand. It tasted just fine.
