Peanut Butter Pumpkin Muffins


I knew exactly the muffin I wanted to make for Muffin Monday. It had to have pumpkin and it had to have peanut butter. These are not the most attractive looking muffins, however they are quite healthy for you.

Now... I know I have already made the easiest pumpkin muffins in the world found here... but I love peanut butter and wanted some in my muffins. Yea... for peanut butter! I am sorry for those of you who have peanut allergies. You will have to pass on these muffins... but could make my other pumpkin muffins.

I love the smell of muffins baking in my kitchen every Monday morning. This time of year is wonderful!


Peanut Butter Pumpkin Muffins

1 cup ground quick oats
1 cup all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1 tsp. vanilla
1/4 cup peanut butter
1 cup almond milk
1 cup pumpkin puree
1/2 cup maple syrup


Directions:
Preheat oven to 350 degrees. Place paper liners in muffin tin. 
Mix together dry ingredients in a bowl, set aside.
In another bowl combine and mix wet ingredients. 
Combine the wet and dry ingredients and mix well.
Spoon batter into prepared muffin cups.
Bake at 350 degrees for 20- 25 minutes.
Let cool on wire rack for 5-10 minutes.
