Pumpkin Muffins




Pumpkin Muffins... the easiest muffin to make for the fall. This 2-ingredient muffin is perfect... for a last minute party, a friend who is sick, a fall treat, or a blogger's exchange.

They should only take you about 30 minutes from start to finish to bake. I have made these for several years now. They are quite good.

Pumpkin Muffins

1 lemon cake mix (you can also use a spice cake mix)
1 (15 ounce) can of pumpkin

Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners. In a large bowl mix ingredients until smooth. Divide among cupcake liners. Bake at 350 for 20 minutes, or until golden brown.
Makes 12 large muffins or 36 mini muffins.




Yes... most of us has shut the front door on Summer... but some of us are still experiencing summer weather.
I hate it. I want fall to come. We don't really have all the fall colors... which I miss terribly...but it does finally cool down, come October.



I am sure I will be making more of these the next few months.
These Pumpkin Muffins.... are the superb fall treat.

  2. No...I used a french vanilla cake mix for the cookies. You basically can use any kind of cake mix.
    I love pumpkin too.
