Green Chili Cornbread Muffins





Green Chili Cornbread Muffins.

This time of year... there are chili cook-offs... Halloween parties... and many cold nights where a bowl of chili warms your soul.

These Green Chili Cornbread Muffins make a great side.
They complete the chili!

Here is the recipe:

Green Chili Cornbread Muffins

*adapted and changed from Better Homes and Gardens Annual Recipe Cookbook 1996


2 cups all purpose flour
1/4 cup sugar
2 tsp. baking powder
1/4 tsp salt
2 slightly beaten eggs
1 cup milk
1/4 cup butter, melted
1 4 oz. can diced green chili peppers, rinsed and drained
1/4 cup cornmeal

Preheat oven to 400 degrees.
Line your muffin tin with paper cups, or grease and flour your muffin tin.
In a small mixing bowl combine the flour, sugar, baking powder, and salt. In another mixing bowl, combine the eggs, milk, melted butter, and green chili peppers. Add the flour mixture to egg mixture. Stir until just moistened.
Spoon batter into prepared muffin cups.
Bake at 400 for 20-25 minutes.
Remove from oven and cool on wire rack.

Makes 12 muffins.






These will definitely be taken to my next party!
When I served these muffins with chili for my family... I took my muffin and broke into pieces and put into my chili. It was delicious!
