Chocolate-Peppermint Icebox Cookies


I am sitting here typing up this wonderful recipe to share with you on National Cookie Day!
Yes... this time of year is famous for their cookie exchanges... so why not celebrate it!!!

MUNCH... MUNCH.... MUNCH... that's me munching on these cookies!

They are good! They are really good!

Just look at the beauty of these cookies!



Here is the recipe:

Chocolate-Peppermint Icebox Cookies

*adapted from Cooking Light Annual Recipes 1998

Basic Icebox Cookies
1 cup all purpose flour
¼ tsp. baking soda
⅛ tsp. salt
¼ cup margarine, softened
⅔ cup sugar
1 tsp. vanilla extract
1 large egg white

Combine first 3 ingredients in a bowl, set aside. 
Beat margarine at medium speed with an electric mixer until light and fluffy. Add sugar. 
Add vanilla and egg white, beat well. Add flour mixture and stir. 

Turn dough onto wax paper.
Roll each dough portion between 2 sheets of wax paper to form a 12-inch square. Freeze dough for about 5 minutes. 

Chocolate-Peppermint Icebox Cookies
¾ cup all purpose flour
¼ cup unsweetened cocoa
¼ tsp. baking soda
⅛ tsp. salt
¼ cup margarine, softened
⅔ cup sugar
1 tsp. peppermint extract
1 large egg white

Combine first 4 ingredients in a bowl, set aside. 
Beat margarine at medium speed with an electric mixer until light and fluffy. Add sugar. 
Add vanilla and egg white, beat well. Add flour mixture and stir. 

Turn dough onto wax paper
Roll each dough portion between 2 sheets of wax paper to form a 12-inch square. Freeze dough for about 5 minutes. 

Slowly remove the wax paper from the Basic Icebox and Chocolate-Peppermint Icebox and stack dough portions one on top of each other. Roll together into a log, and wrap in wax paper. 
Freeze for 3 hours.
Remove dough from freezer and let sit for about 15-20 minutes, or until you can cut through it.
Cut dough log into ¼ inch slices with a knife or dental floss.
Bake at 350 degrees for 10 minutes.
Remove cookies to wire rack and let cool.


*** I doubled these two recipes to make them JUMBO cookies.
