I remember my first time getting on pinterest! I started creating my boards and started my love for pinning recipes. Believe it or not, my cousin was talking about pudding cookies on Facebook and so I went to pinterest to find the recipe. YES, pinterest to find the recipe!!! To this day- I still go to pinterest to find all of my recipes. I pinned this recipe from
Chef in Training. THAT was my very first pin on pinterest-Oreo Pudding Cookies. I made them right off the bat and they were well liked here at thirtyfiveninetyfive. I also made some of these Red Velvet Pudding Cookies and they were my favorite pudding cookie UNTIL now!
In honor of my very first PIN from PINTEREST I decided to make pudding cookies again. This pudding sugar cookie is by far one of my favorites! I love sugar cookies. This particular cookie has a crunchy hard exterior, but a pleasing soft center!!!
Here is my version of the Recipe:
1 cup butter, softened
1 cup vegetable oil
1 cup sugar
1 cup confectioners' sugar (powdered sugar)
2 eggs
1 tsp. vanilla
1 pkg. (3.4 oz) vanilla instant pudding mix
4 cups all purpose flour
1 tsp. cream of tartar
1 tsp. baking soda
* extra 2/3 cup of sugar for sugar effect
In a large mixing bowl, cream the butter, oil, and sugars for 4-5 minutes. Beat in the eggs, vanilla, and dry pudding mix. Combine the flour, cream of tartar, and baking soda. Add to creamed mixture. Drop by tablespoons onto parchment lined baking sheet.
Now for the fun part! Take your extra 2/3 cup of sugar and drop into baggie. Add gel food coloring. Mix it together.
The sugar will look like this!
Roll your raw cookie into the purple sugar mixture, and add back to baking sheet. Flatten with a cup. I just used a measuring cup.
Then Bake at 350 F for 10 minutes! Just 10 minutes, any longer will make your cookies really hard.
Transfer to a wire rack. Yields about 5 dozen cookies.
You could use whatever color of gel you would like! I love purple and so they ended up being purple pudding cookies. I would love to have you follow me on pinterest, here is the link!
