The other night my husband and I went out to dinner with some good friends. We were debating about which restaurant to eat at and I had been recommended this restaurant from a friend. I have never eaten there. My friend is on a strict diet for her cancer. When I recommended Chino Bandido she had to look up the food to see if she could eat it. The menu looked pretty good. We then decided to try it, and we are sold!!! We love it!!
We were first timers to Chino Bandido, and the service was great!! When you walk into the restaurant they pulled us aside and gave us small samples of their most popular dishes in these cute little cups! Chino Bandido's Emerald Chicken was my new favorite. It was so delicious! You can either order your food in a la carte, quesadilla, or burrito. Needless to say all of their food was very tasty!!
When I got home I went searching for this recipe to see if I could copy it at home. I found it on this site, here!
Here is a copy of the recipe:
Emerald Chicken
1/4 cup finely minced peeled fresh ginger
3/4 cup finely minced green onion
1 tsp. kosher salt
1 cup vegetable oil
Combine ginger, green onion, and salt in a small bowl. Add vegetable oil, stirring to combine and dissolve salt. Strain mixture through a cheesecloth to drain oil. Serve immediately or store in airtight container. Serve with chopped chicken.
