My Weekly Menu April 22-April 26


Last weeks Menu was good! I was going to do a post on the Crockpot Pineapple Chicken. I never got around too it, sorry. However it is a good recipe, and still wanted to share it with you. The only difference is that I don't add the rice in the cooking process. I cook my rice separate. I then serve the chicken and pineapple on a bed of rice. Easy and delicious! I am on a pineapple kick lately.
The other neat thing about my menu this week was I made made my very own Homemade Enchilada Sauce. I copied Table for 7's exact recipe and it turned out great! I was excited because it did taste like the store bought kind without all of the extra stuff! Thanks Erin for the great recipe!


On the Menu for this week is...

Monday: Baked Potato Bar

Tuesday: Ravioli Lasagna

Wednesday: Chicken BLT Sandwiches

Thursday: Korean BBQ Beef is my new recipe to try this week. 

Friday: Grilled Pizza
