Cowboy Cookies




I guess it is officially declared as cookie week on the blog! These are one of my two favorite cookies! These Cowboy Cookies were first introduced to me about 3 years ago. Our family was invited over to a friends house for family night. She pulled these bad boys out of the freezer for dessert. I don't usually freeze my cookies, so I was intrigued.
She freeze's her cookies. They were so delicious! I had like 3 of them, no joke! We had a tall glass of milk with these bad boys. 
The next few weeks I kept asking for the recipe. Never got it. I guess I could have looked it up online, but what is great is asking how "they" make them. You see you can follow any recipe, but some people add this or take away that and make it their own. I wanted her recipe. I had tasted them and knew that I loved them!
Well... over a year ago my baby Jayd was born, and my friend  brought some of these bad boys over to me with a cute little note attached that had the recipe! Yea!!

Here is the Recipe:

Cowboy Cookies
By Carrie Perrins 

Cream:
1 cup butter
2 cups brown sugar
2 eggs
1 Tbsp. water

Mix in:
1 tsp. soda
1 tsp. baking powder
2 cups flour
1 cup coconut
1 cup chopped nuts (optional)
1 cup assorted chips, raisins, craisens
2 cup quick oats

Refrigerate 1 hour. Bake 375 8-9 minutes. Freeze for about 1-3 hours or overnight. Store in freezer. 



Step 1: Cream
 Step 2: Mix


 Step 3: Refrigerate
 Step 4: Bake



 Step 5: Freeze

Step 6: Serve-Remove from freezer at least 1/2 hr before you serve. You don't want to break your teeth! The freezer keeps them cold. 

These are truly a great cookie!
