Peanut Butter Oatmeal White Chocolate Cookies



I have two favorite cookies! Peanut Butter Oatmeal White Chocolate Cookies and Cowboy Cookies, and if you missed my post yesterday a new favorite chocolate chip cookie
I found this Peanut Butter Oatmeal White Chocolate Cookie recipe from Averie cooks. It has become my go to and FAVORITE cookie recipe! I love to make them different every time... by adding different chips. But... I do have to say that my favorite has to be made with butterscotch. I love butterscotch chips! These pictured were made with Reese's Pieces® chips. My husband loves cookies and the cookie jar has to be filled. I usually find more time to bake on the weekends and so that has become a family tradition. 

Here is the Recipe:

Peanut Butter Oatmeal White Chocolate Cookies
Adapted from Averie Cooks

1/2 cup butter
1/3 cup peanut butter

1 cup brown sugar
1/2 cup white sugar
1 egg + 1 yolk
2 tsp. vanilla
1 1/4 cups all-purpose flour
1 cup old fashioned oats
1/2 tsp. baking soda
3/4 cup white chocolate chips
1/2 cup peanut butter chips
1/2 cup of any kind of chips you prefer-butterscotch, chocolate chips etc. 

Directions:
In a medium sized microwavable bowl, melt the butter and peanut butter together. Power on for 30 second intervals. Remove from microwave, stir, and if not melted power on for another 30 seconds. 
Set this in freezer for about 3-5 minutes, or bring to room temperature.  Then add to a bigger mixing bowl. 


Add sugars, eggs, and vanilla extract and stir. Then add the flour, oats, and baking soda. You should have a cookie dough consistency if you do not, add more flour if it is too wet, or more peanut butter if it is too dry. 





Add the white chocolate chips, peanut butter chips, and or any other kind of chips and stir. 
Use a cookie scoop and put onto a cookie sheet about 2 inches apart. 
Bake at 325 degrees for 10-12 minutes. 
Remove from oven, and transfer to cookie cooling racks. Let cool. 
Makes 2 dozen. 




My mom got me this Silpat® cookie baking mat for Christmas. To be honest... I have never used it. As I was baking these cookies my mom asked me where it was and if I have used it before. I humbly said Umm... No.
We broke it out and used it for the first time. AHHHMAZING...!!! The cookies didn't even stick to it. I usually use parchment paper, but this was much better. I don't have to keep buying parchment paper.
This silpat® cookie mat has become my new best friend. I just wiped it down with water and let it air dry.

  1. Oooh, these look great! And I love how you change to different chips each time you make them. I am SO jealous of all of the different flavoured chips that you have in the US. Might have to try and get my hands on some butterscotch chips! Thanks so much for sharing :)
