Last week I had to make a snack for my daughter's kindergarten class.

You see... I was being a total rebel. I am supposed to buy treats for my daughters class. I don't understand this policy. I can buy them... and then what take them out and put them into individual bags or plates?? Doesn't make sense!! Yes... so I made them!
I was having trouble deciding what to make... and was going through my phone and found this picture. It was a copy of this magazine! Matthew Mead's Halloween Spooktacular! Oh my... this magazine is amazing! Some really cool crafts and recipes!

Here is the recipe:
Mini Monster Chocolate Muffins

*adapted from Buttercream Bakehouse
2 cups all purpose flour
1 cup cocoa powder
3/4 cup granulated sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 1/4 cups whole milk
2 eggs, beaten
2 Tbsp. butter melted
1/3 cup vegetable oil
1 1/4 tsp. vanilla
1/2 cup semi sweet chocolate chips
Preheat oven to 350 degrees. Line muffin tin with paper cups.
Mix flour, cocoa powder, sugar, baking powder, and salt in a big mixing bowl. In a separate bowl, combine eggs, butter, milk, vanilla, and vegetable oil.
Add the wet ingredients to the dry ingredients. Do not over-mix.
Add chocolate chips gently and give it a quick small stir. Again... do not over-mix.
Then with a cookie scoop place the batter into muffin tin.
Bake at 350 degrees for 18-20 minutes.
I baked my mini muffins for 10 minutes and they were done. Adjust your bake time according to the style of muffins.
This recipe makes 8 extra large jumbo muffins, 18 regular muffins, or 30+ mini muffins.
Remove from oven and let cool.
Once cooled... melt some green Wilton candy melts. To do this... follow directions on the back of the candy bag.
In a Ziploc baggie, add melted chocolate and cut the corner with scissors and just drip across muffins. Let sit for 1-2 minutes and then add immediately 1-3 Wilton Candy Eyeballs (I found my at my local grocery store.)
Let cool in refrigerator for 5-10 minutes to set.
Serve.
These muffins are best served that day.
