I didn't come up with this name... I promise. I know that a lot of people claim their recipes are the best. I got this recipe from a friend. She named it that. But I am going to use it!!!

The holidays are over... trying to organize and clean out the house. Trying to accomplish many many tasks... and so you let some things go to the back burner. I have let muffin Monday go to the back burner for a while.
But today... I decided I needed a muffin.
These muffins were simple. They were just what I needed.
I loved the raspberry and white chocolate combo!
The smell alone made me much happier.
These muffins are the best because...
- they are simple.
- they have chocolate.
- you can add almost anything you would like to them.
Enough said... right?!!
Here is the recipe:
Best Muffins

1 ¾ cup flour
½ cup sugar
2 ½ tsp. baking powder
¾ tsp. salt
1 egg
¾ cup milk
⅓ cup oil
1 tsp. vanilla

½ cup raspberry preserves
½ cup white chocolate chips
handful of walnuts
Preheat oven to 400 degrees. Line muffin tin with paper cups. In a medium mixing bowl, combine all ingredients and mix with electric beaters.
Bake at 400 degrees for about 25 minutes. For mini muffins bake at 400 degrees for about 15 minutes.
* You can add whatever you like to these muffins. Blueberries, applesauce, nuts, anything goes! I added raspberry preserves and white chocolate chips. Oh boy... were they good!
I did something that I enjoyed today... and baked these muffins. What are you up to today??
