Glazed Orange Muffins



Do you love oranges??
I do!
I have muffin for you today.

Glazed Orange Muffins.



This muffin is a sweet muffin. It is topped with cinnamon and sugar and a orange glaze. It gives it a crunchy yet sweet taste. It is really delicious. It almost tastes like orange rolls, which I love!
When I was putting together the perfect cinnamon and sugar mixture this past week, I wanted to make some cinnamon roll muffins. However, I decided to  make these instead. I topped them with the perfect cinnamon and sugar mixture and a orange glaze.

Perfection!

Here is the recipe:

Glazed Orange Muffins

*adapted and slightly changed from Betty Crocker's New American Cooking

1 egg
¾ cup milk
⅓ cup vegetable oil
¼ cup honey
2 cups all purpose flour
3 teaspoons baking powder
½ tsp. salt
3 teaspoons freshly squeezed orange juice

Orange Glaze
1 cup powdered sugar
1 tsp. finely shredded orange peel
2-3 Tbsp. orange juice
Mix until smooth. 


Directions:
1. Heat oven to 400 degrees. Line muffin tin with paper cups. 
2. In a medium mixing bowl, beat egg, stir in milk, oil, and honey. 
3. Stir in remaining ingredients all at once just until the flour is moistened. (batter will be lumpy)
4. Fill muffin cups. 
5. Sprinkle with cinnamon and sugar mixture. 
6. Bake for 20 minutes or until golden brown. 
7. Remove from oven and pan immediately and put on wire rack to cool. 
8. Pour Orange Glaze over muffins. 

**I sprinkled The Perfect Cinnamon and Sugar Mixture on the top just before I put them in the oven.**

While muffins are baking... mix up the Orange Glaze. Set aside.

Once you have pulled the muffins out of the oven and pan, pour orange glaze over each muffin. 
Serve immediately. 

Makes 12 Muffins. 



These Glazed Orange Muffins are wholesome muffins, using moderate use of salt, sugar and fats. 
They are dense, yet delicious. 



Oranges... here in Arizona citrus is always in an abundance. Friends and neighbors.... willing give them away for free.  I used one medium orange to make these Glazed Orange Muffins. I finely shredded the peel, and then freshly squeezed the juice to use in the recipe and glaze.
It tastes like orange heaven.
