Thin Mint Cake Brownies


Last week I was driving around town looking for girl scout cookies. It was a weekday and I couldn't find them anywhere!!
Then the weekend came... girl scouts on every corner and at every grocery store.
I must say thank you... because I really wanted to make these Thin Mint Cake Brownies.

I love girl scout cookies. Thin mints are my favorite. These thin mint brownies...are the ultimate brownie!

Here is the recipe:

Thin Mint Cake Brownies

1 devils food cake mix
1 small box cook n' serve chocolate pudding (not the instant)
½ bag dark chocolate and mint chocolate chips
½ tsp. peppermint extract
1 sleeve of thin mints girl scout cookies crushed

Cook the pudding according to the directions on the package, let cool. Add dry cake mix to the pudding mix and add some of the chocolate chips and extract.
Mix thoroughly. Pour into a greased 9x13 pan. Sprinkle remaining chocolate chips on top, if desired.
Bake at 350 degrees for 30 minutes. Let cool. Sprinkle crushed thin mints over brownies.


I love cake brownies. I had a good friend growing up that her mom made the best cake brownies on the planet. It brings back so many wonderful memories.  Her is a family favorite secret recipe that is not to be shared. This is not that recipe... but still very very close! I hope to someday create those type of memories with my girls.

Now... I know that there are a dozen or more of thin mint brownies all over Pinterest and floating around the web. This recipe is my favorite!  This is the one I created and wanted to share with you.


This one has double the mint with the chocolate chips and extract... but it is not overpowering. 


This girl scout cookie season doesn't last very long. Soon the girls may not be on the corner of every grocery store... do yourself a favor buy a box of thin mints and go make these brownies. Maybe even buy two and store one in the freezer for later.

You will be in mint heaven.
