If you know me I don't have a very good memory, but this is something that I will always remember. My dad waking up early to cook us breakfast. He cooked us oatmeal and these scrumptious Swedish Pancakes (which is what we call them.) They have become a family tradition! Every time grandpa comes around, we know we are in for a treat! I even make them for dinner, when nights are hectic.
My Dad's Famous Swedish Pancakes

2 eggs
1 cup of flour
1 tsp. of salt
1 1/2 cups of milk
Combine and put small amount in a pan sprayed with Pam. Brown for about 3 minutes, then flip and brown the other side. Serve with powdered sugar, any type of jam or jelly, and syrup!
In our home my girls like them light light brown with syrup and powdered sugar. My husband likes them with jam or jelly. My FAVORITE is with my homemade Strawberry freezer jam, powdered sugar, and some whip cream!
