Double Butterscotch Cupcakes




My birthday. The day I was born. The day my mother hugged two infants close to her heart!
My birthday. A day to celebrate life. I am celebrating my birthday on the blog for the next couple of days. Yippee!
I wanted to share with you something about me... that if you are reading my blog you know... but if not.. know you do... I love butterscotch. I love the taste of it. It is a form of caramel but made with butter and brown sugar. A golden brown delicious treat!

On birthdays... usually there are cupcakes and ice cream.
I wanted to share this recipe for Double Butterscotch Cupcakes with you. It is my favorite. These will be eaten for sure on my birthday.

Here is my recipe:

Double Butterscotch Cupcakes

2 cups flour
1 1/4 cups sugar
1 (3.4 oz) pkg. instant butterscotch pudding mix
1 (3.4 oz) pkg. instant vanilla pudding mix
2 tsp. baking powder
1/2 tsp. salt
1 cup water
4 eggs
3/4 cup canola oil
1 tsp. vanilla
1 cup butterscotch chips

Directions:
Preheat oven to 350 degrees.
Combine flour, sugar, both pudding mixes, baking powder,and salt in big mixing bowl. In a separate bowl combine, water, eggs, canola oil, and vanilla. Mix well. Stir the wet mixture into dry ingredients and mix just until moist. Stir in butterscotch chips.

Spoon batter into cupcake holders filling it 2/3 the way full. Bake for 16 to 20 minutes or until toothpick that is inserted comes out clean. Cool completely before frosting. Frost with your choice of frosting.
Makes 24 cupcakes.
