Cranberry Banana Muffins



In my kitchen sat some very old brown bananas... you know the ones I am talking about right. The brown spotted mushy bananas... that no one will eat. I thought to myself... I need to use those up. They hadn't gone bad yet... in fact they were just perfect.  I decided to make some banana muffins... no... not just banana muffins but Cranberry Banana Muffins.
I added some yummy Craisins... to make a banana muffin even better.

Here is the recipe:

Cranberry Banana Muffins

1 cup sugar
1 egg
½ cup milk
½ cup sour cream
⅓ cup oil
2 ¼ cup flour
2 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
½ cup craisins
3-5 small bananas, mashed


Preheat oven to 375 degrees. Line muffin tin with paper cups.
In a mixing bowl, beat all the ingredients. With a cookie scoop, put two scoops into muffin cups.
Bake at 375 for 18-20 minutes.
Let cool.






Yes... my bananas are used up.
When I was making these my girls asked if I was baking banana bread. I said no, why?? They said because it smells so much like it.
Well... it is like banana bread... but in a smaller portion... a cranberry banana muffin.
